Chocolate Chip Muffins: Gluten And Nut-Free

Here's our recipe for some easy and delicious Chocolate Chip Muffins!
1/2 cup coconut flour
1/4 tsp baking soda
1/3 cup salted butter (melted)
1/2 cup maple syrup
1 tbsp vanilla extract
2 tbsp milk (We used 2% milk for this recipe. Feel free to sub in coconut milk!)
1/2 cup mini chocolate chips
(Yields 9 full-size muffins or roughly 24 minis!)
1. Pre-heat oven to 350.
2. Add ingredients to blender, mix on low speed until batter is smooth.
3. Add muffin liners to pan (to make clean up easier).
4. Fill each liner 2/3 full. (I managed to squeeze nine full-size muffins out of this recipe.)
5. Bake for 20 minutes.
6. Cool before eating!
To keep muffins fresh, store in refrigerator or in a covered container.
